Sourdough Pizzas

All our pizza dough is made using our 127 year old Sourdough Starter. 


We offer 5 different distinct styles of pizza:

Romana In Pala Style

In Pala translates to "on the shovel" meaning cooked directly on the oven hearth floor with no screen using our large pizza paddles or "shovels." This rectangular pizza can be found on the corner of most streets of Rome and is known for being light and fluffy yet crispy and crunchy.

Napoletana Style

The 1st style of pizza ever made, originating in Naples, Italy.  It is cooked in a dome style oven at nearly 1000’ & is ready in 60-90 seconds.  It has a soft pillow like crust, a scorched “leopard” spotting cook & can be a little soupy. 

Choose any of the following pizzas with a Roman or Napoletana crust!

Plum tomato sauce with Grana Padano parmesan, fresh basil, fresh mozzarella, drizzled with extra virgin olive oil

Pesto Veggie
Pesto, fresh mozzarella, artichoke hearts, roasted mushrooms finished with feta cheese

Cup & Char
Plum tomato sauce, cup & char pepperoni, fresh mozzarella and shaved parmesan cheese

Truffle Shuffle
Mushrooms & gorgonzola crumbles finished with dollops of ricotta cheese & truffle honey

Gorgonzola sauce, bacon, red onions & feta

Prosciutto Arugula
Plum tomato sauce, mozzarella, Grana Padano parmesan finished with arugula & prosciutto

New Yorker
Pepperoni, Italian sausage, plum tomato sauce with ricotta, Mike’s hot honey & basil


Detroit Style

A 14”x 10” rectangle with a Wisconsin brick cheese, aged white cheddar & mozzarella cheese combined to form a spectacular crispy cheese CROWN on its edge and finished with stripes of warm Red Sauce ladeled on top (8 pieces)

New York Style

Our traditional Award Winning 16” round pizza with mozzarella cheese (8 pieces)


Sicilian Style

A 16" x 16" square fluffy pan pizza (16 pieces)
